Lemon Cucumber Salad

My Mother-in-law has a beautiful garden where she grows so many yummy fruits and veggies. One of my husbands favorite summer time vegetables is the lemon cucumber. It’s small, round and yellow. Unfortunately I totally spaced taking a picture of them before I cut them up for the salad but feel free to google away.

One delicious way to dress up cucumbers is to put them in a summer salad. Here are the ingredients you will need for my Lemon Cucumber Salad:

1/2 cup sour cream or plain yogurt
4 lemon cucumbers
2 tomatoes
1/2 a yellow onion
2 Tbs dill

This is really simple to make. Chop up the cucumber, tomatoes and onion into small bite sized pieces. Then mix it all together with the sour cream and dill. My husband says the more dressing the better, so if it seems too dry, go a head and add more sour cream or yogurt.
